My grandma always told me, 'Cakes made with a dash of love carry a certain magic.' After making this hundreds of times, I can say her words ring especially true for this bewitching dessert.

Elevate Your Dessert Moment

Pair it with some fresh island fruits, a spoonful of whipped cream, or a hot cup of coffee. For fancy gatherings, toss some edible flowers on top for extra magic.

Tasty Twists

Switch things up by throwing in some vanilla bean, adding a splash of rum flavoring, or trying different coconut garnishes. For something extra fancy, pour warm caramel over the top.

Keeping It Fresh

Cover it and leave it out for up to three days. Since it's so moist already, it won't dry out as fast as other cakes do.

After tons of practice in my kitchen, I've found this cake hits the sweet spot between old-world charm and pure magic. When you follow each step carefully and with love, what comes out of the oven is truly something special.

Ingredients

→ Cake Batter

01 ½ cup granulated sugar
02 3 tablespoons margarine
03 1 can condensed milk
04 3 large eggs
05 2½ cups (500 grams) all-purpose flour
06 1 can evaporated milk
07 1 cup coconut milk

→ Coconut Icing

08 2 tablespoons granulated sugar
09 1 cup shredded coconut
10 1 cup coconut milk

Directions

Step 01

Toss all the cake ingredients into a blender: coconut milk, evaporated milk, sugar, condensed milk, flour, eggs, and margarine. Run the blender until the mixture is lump-free.

Step 02

Turn your oven to 350°F and get a Bundt pan ready. Grease it up and sprinkle a bit of flour over it, especially in those tricky corners.

Step 03

Pour the blended batter into the greased pan. Pop it in the oven and bake for 30 to 60 minutes. Start checking with a toothpick after 30—when it comes out dry, you're good.

Step 04

While the cake bakes, mix coconut milk, sugar, and shredded coconut in a saucepan. Heat it on medium and cook, stirring until it starts bubbling and thickens up.

Step 05

As soon as you pull your cake from the oven, pour the warm coconut topping all over. Let it sit and cool before serving.

Notes

  1. Oven bake times differ, so check your cake starting from 30 minutes.
  2. Pour the icing right after baking to soak into the cake.
  3. Don’t take the cake out of the pan until it’s totally cooled.
