Get your oven nice and hot—set it to 450°F (230°C). Cover two big baking trays with a sheet of parchment paper.

Mix the Greek yogurt and self-rising flour in a large mixing bowl or with the dough hook on a stand mixer. Stir with a fork if you're doing it by hand until the dough is crumbly or holds together roughly. If using the stand mixer, let it knead the dough into a lumpy dough ball.

Sprinkle some flour on your hands and spread a little on the surface you're using. Dump the dough out onto it and knead for just a few minutes, until it softens and smooths out. Form it into a ball and leave it for a bit while getting your pizza toppings ready.

Split the dough into two balls for two pizzas, or keep it whole to make one giant pizza. On the parchment-lined sheets, start shaping the dough into circles or rectangles. Roll it out gently with a rolling pin, then pat and press with floured hands to get your desired shape.

Smear some pizza sauce over the crusts, pile on your favorite toppings, and pop them in the oven for about 20-25 minutes. The edges should turn a light, golden brown when it’s done.
