These sweet potato bites with goat cheese, cranberries, and pecans are sweet, creamy, and crunchy all in one. A perfect appetizer or snack!

# Ingredients:

01 - 1 large or 2 small sweet potatoes, cut into ¼-inch thick rounds.
02 - 1 tbsp olive oil for cooking.
03 - 4 oz goat cheese, softened and ready to mix.
04 - 2 tbsp milk, any variety works.
05 - 1 tsp fresh rosemary, chopped for flavor.
06 - Black pepper, season as you like.
07 - Kosher salt, add to taste.
08 - ½ cup dried cranberries, for a touch of sweetness.
09 - ¼ cup pecans, toasted and chopped for texture.
10 - Honey to drizzle on top.

# Directions:

01 - Set your oven to 425°F (220°C) and lightly coat a rimmed baking tray with cooking spray.
02 - Combine sweet potato slices with olive oil, pepper, and salt. Spread them out in one layer on your tray.
03 - Bake for 10 minutes, turn them over, and roast another 8-12 minutes until golden and soft.
04 - Blend goat cheese, milk, rosemary, salt, and pepper until smooth and creamy.
05 - Spoon about ½ tsp of whipped goat cheese onto each roasted sweet potato slice. Sprinkle with pecans, cranberries, and finish with a drizzle of honey.
06 - Enjoy either warm or at room temperature as a starter or side.
