Florida Shrimp Pie (Print Version)

# Ingredients:

→ Crust

01 - 1 thawed Pillsbury™ Deep Dish Pie Crust

→ Filling

02 - 4 eggs, large size
03 - 1/2 cup of cream cheese spread with chives and onion
04 - 12 oz cooked shrimp, without tails, thawed and chopped
05 - 1/2 cup shredded pepper Jack cheese

# Instructions:

01 - Preheat oven to 375°F with a cookie sheet inside. Let the crust sit out for about 10-20 minutes to soften. Use a fork to poke holes in the bottom and sides. Bake it on the cookie sheet for 9-11 minutes until it looks lightly golden.
02 - Whip the cream cheese until smooth. Add eggs one by one, mixing thoroughly after each. Toss in the chopped shrimp and pepper Jack cheese, and stir it all together.
03 - Pour the mixture carefully into the crust that’s already been baked. Pop it back onto the cookie sheet and bake for 30-35 minutes. The center should set and the top should have a light golden color.
04 - Let the pie sit for 15 minutes before cutting it into slices. Serve it warm.

# Notes:

01 - Drain the shrimp well to avoid too much liquid in the mixture.
02 - Works as a main dish or can be portioned into smaller pieces for snacks.
