Preheat oven to 375°F with a cookie sheet inside. Let the crust sit out for about 10-20 minutes to soften. Use a fork to poke holes in the bottom and sides. Bake it on the cookie sheet for 9-11 minutes until it looks lightly golden.

Whip the cream cheese until smooth. Add eggs one by one, mixing thoroughly after each. Toss in the chopped shrimp and pepper Jack cheese, and stir it all together.

Pour the mixture carefully into the crust that’s already been baked. Pop it back onto the cookie sheet and bake for 30-35 minutes. The center should set and the top should have a light golden color.

Let the pie sit for 15 minutes before cutting it into slices. Serve it warm.
