Cobbler-Inspired Cinnamon Rolls (Print Version)

# Ingredients:

→ For the Dough

01 - 1 cup milk, warmed to about 110°F
02 - 2 teaspoons dry yeast (active)
03 - 1/4 cup sugar
04 - 1/4 cup butter, melted
05 - 1 teaspoon salt
06 - 2 eggs (large)
07 - 4 cups flour (all-purpose)

→ For the Filling

08 - 2 cups fresh or canned peaches, diced
09 - 1/2 cup sugar, brown
10 - 2 teaspoons cinnamon, ground

→ For the Frosting

11 - 4 ounces softened cream cheese
12 - 1/4 cup softened butter
13 - 1 cup sugar, powdered
14 - 1 teaspoon vanilla

# Instructions:

01 - Add a tiny bit of sugar to the warm milk, then sprinkle the yeast over it. Let it sit for about 5 minutes until bubbles form. Mix the sugar, melted butter, eggs, salt, and flour in a big bowl, then pour in the foamy yeast mixture. Stir until things come together, then knead into a smooth dough that stretches easily. Put it in a greased bowl, cover it up, and let it puff up for an hour until it’s twice as big.
02 - In a mixing bowl, gently toss the diced peaches with the cinnamon and brown sugar until everything’s evenly coated.
03 - Dust your surface with some flour and roll the dough out into a big, flat rectangle. Spread the peach filling all over it, keeping it even. Roll it up snugly from the longer side to make a log shape. Slice it into 12 pieces of about the same size, and arrange them in a greased baking dish so there’s room between them to expand. Let them sit for half an hour to puff up again.
04 - Set your oven to 350°F (175°C) to preheat. Pop the rolls into the oven and bake for about 25 minutes, or until they’re golden on top.
05 - While the rolls are baking, beat the butter and cream cheese together until smooth and fluffy. Gradually mix in the powdered sugar and vanilla until the icing is creamy and super smooth.
06 - Take the rolls out of the oven and cool them just a bit. Spread that cream cheese icing on top while the rolls are still warm, then serve them up!

# Notes:

01 - If your peaches are really juicy, mix them with a spoonful of flour to thicken up the filling and avoid it getting too soggy.
