Cheesy Mushroom Chicken (Print Version)

Golden-seared chicken stuffed with smoky mushroom cheese filling finished with buttery garlic sauce.

# Ingredients:

01 - 4 medium-sized chicken breasts.
02 - 1 cup shredded Swiss or mozzarella cheese.
03 - 1/2 cup chopped sautéed mushrooms.
04 - 1/4 cup softened cream cheese.
05 - 1/4 teaspoon thyme, dried.
06 - Black pepper and salt as needed.
07 - 3 tablespoons butter, unsalted.
08 - 2 minced garlic cloves.
09 - 1/2 cup broth made from chicken.
10 - 1/4 cup heavy whipping cream.
11 - 1/2 teaspoon dried parsley flakes.
12 - 1/4 teaspoon pepper, ground.
13 - 1 tablespoon grated Parmesan (if you want).

# Directions:

01 - Set your oven to 375°F. Slice pockets into the chicken and season with pepper and salt.
02 - Combine thyme, mushrooms, and cheeses. Pack the mixture into the chicken and use toothpicks to hold them closed.
03 - In a tablespoon of butter, brown the chicken for 3-4 minutes on both sides.
04 - Put the chicken in the oven for 15-20 minutes, making sure it reaches 165°F inside.
05 - Melt 2 tablespoons of butter and cook the minced garlic for a minute.
06 - Pour in the heavy cream, broth, parsley, and some pepper. Let it cook for about 3-4 minutes until it thickens.
07 - Put the chicken back into the pan and pour the sauce over it before serving.
