Cool and creamy layers with a crunchy Oreo base and minty filling topped with fluffy sweetness. Inspired by an iconic mint milkshake!

# Ingredients:

→ For the Crust

01 - 6 tablespoons melted unsalted butter
02 - 1 1/2 cups crushed chocolate sandwich cookies (like Oreos)

→ For the Mint Layer

03 - 4-5 drops of green food coloring
04 - 1 cup powdered sugar
05 - 8 ounces softened cream cheese
06 - 1/2 teaspoon peppermint extract
07 - 1 1/2 cups whipped topping (such as Cool Whip)

→ For the Pudding Layer

08 - 1 3/4 cups of cold milk
09 - 1 box (3.4 oz) of instant vanilla pudding mix

→ For the Topping

10 - Crushed chocolate sandwich cookies, 2-3 for garnish
11 - 1 1/2 cups of whipped topping
12 - Green sprinkles or mint candies, optional

# Directions:

01 - Combine the cookie crumbs and melted butter in a medium bowl. Press the mixture into the bottom of a 9×9 inch dish. Pop it in the fridge for about 10-15 minutes until it firms up.
02 - Using a large bowl, whip the cream cheese until it’s smooth. Add in the powdered sugar, peppermint extract, and green color drops, mixing well. Gently fold in the whipped topping until it’s fluffy and light. Spread this over the chilled crust evenly.
03 - Stir together the instant pudding mix and cold milk for around 2 minutes, or until it thickens. Spread the pudding mixture over the mint layer gently. Let it set in the fridge for another 10 minutes.
04 - Spread the remaining whipped topping as the final layer. Add a sprinkle of crushed cookies, sprinkles, or mint candies over the top.
05 - Let the whole thing sit in the fridge for at least 4 hours or overnight to fully set. Cut into portions and serve it cold.

# Notes:

01 - You can prepare this up to two days in advance, making it great for celebrations or big dinners.
02 - Use mint-flavored cookies instead of the regular ones for an extra kick, or swap with graham crackers for a different crust.
03 - Leftovers stay fresh for up to three days in a closed container in the fridge.
04 - Perfect for festive events like St. Patrick’s Day or whenever you’re in the mood for a minty dessert.
