English muffins topped with bacon, eggs, and cheese make these mini pizzas a breakfast favorite.

# Ingredients:

01 - 4 king-sized English muffins
02 - 1 tablespoon olive oil
03 - 1 teaspoon garlic powder
04 - 1 teaspoon onion powder
05 - 1 tablespoon butter
06 - 6 large eggs
07 - 2 tablespoons milk
08 - 6 slices bacon
09 - 1.5 cups shredded cheddar cheese
10 - 1.5 cups shredded Monterey Jack cheese

# Directions:

01 - Preheat the oven to 400º.
02 - Line a large baking sheet with aluminum foil and arrange bacon slices in a single layer. Bake for 15 minutes or until slightly crispy but not brittle. Remove bacon to paper towels, pat dry, and crumble into ½-inch pieces.
03 - Melt butter in a medium skillet over medium heat. Whisk eggs with milk and pour into the skillet. Scramble to a soft set stage.
04 - Open the English muffins and place them on a baking sheet. Brush each with olive oil and sprinkle with garlic powder and onion powder.
05 - Divide cheddar cheese among muffin halves. Top with scrambled eggs, crumbled bacon, and Monterey Jack cheese.
06 - Bake the mini pizzas for 10 minutes or until the cheese melts.
07 - Allow pizzas to cool significantly before serving, as the toppings remain very hot.
