Lay the slices of sourdough on your counter. Smear honey mustard evenly across one side of all the slices.

Take the cheese, break it into 4 smaller pieces. Pile turkey, slices of tomato, spinach leaves, and bacon on two bread slices. Top it off with the other slices.

Rub softened butter on the outsides of the sandwich halves, covering all four bread sides.

Place sandwiches on a skillet heated to medium. Cook each side 3-4 minutes till the cheese oozes and bread's toasted golden.

Move the sandwiches to plates. Dig in while they're still warm—add some sides if you'd like.
