Combine 1/2 cup sugar and 1/2 teaspoon cinnamon in a shallow dish. Keep it nearby.

In a saucepan over medium heat, stir together water, milk, vanilla, butter, salt, 2 tablespoons of sugar, and 1/4 teaspoon of cinnamon. Let it come to a strong boil, stirring often. Then lower the heat.

Add the flour to the pot while stirring without stopping until you get a smooth dough ball. Let it cook for 2-3 minutes to reduce moisture.

Put the dough into a large mixing bowl. Use a hand mixer to beat it for 2 minutes to cool down. Incorporate the eggs, adding them one at a time, and beat until it’s creamy and smooth.

Heat about 2 inches of oil in a pot to 360°F. Use a piping bag with a star-shaped nozzle to pipe 3-inch strips of dough into the oil. Fry on each side for about 1.5 minutes or until beautifully golden. Maintain the oil temperature between 350°F and 370°F.

Let the churros drain briefly on paper towels, then coat them with the cinnamon-sugar mixture. Serve warm with chocolate sauce, if you'd like.
