Sweet Egg Rolls (Print Version)

# Ingredients:

01 - 8 oz softened cream cheese.
02 - 1/2 cup powdered sugar.
03 - 1 teaspoon vanilla extract.
04 - 2 cups peeled, chopped peaches.
05 - 1 teaspoon vanilla extract.
06 - 1 tablespoon melted butter.
07 - 1 tablespoon brown sugar.
08 - 1 teaspoon cinnamon powder.
09 - 1 tablespoon cornstarch (optional).
10 - 1 tablespoon water (only if using cornstarch).
11 - 10 egg roll wraps.
12 - Vegetable oil (for frying).
13 - 1/4 cup cinnamon sugar (mix 1 tablespoon cinnamon, 3 tablespoons sugar).

# Instructions:

01 - Warm butter in a pan, then stir in peaches, sugar, cinnamon, and vanilla. Stir and let it cook for 5-7 minutes until the fruit softens.
02 - Combine water and cornstarch if using. Pour into the peaches to make the mix thick. Cook for 1-2 minutes, then cool it down.
03 - Blend cream cheese, sugar, and vanilla together until creamy.
04 - Lay wrapper as a diamond shape. Put 1 spoonful of both the peach and cheesecake mixes in the center.
05 - Fold the bottom tip up over the filling. Tuck in the sides, roll tightly, and seal the edge with water.
06 - Heat oil to 350°F. Fry the rolls for about 2-3 minutes or until crispy and golden.
07 - Toss the fried rolls in cinnamon sugar while they’re still warm.

# Notes:

01 - Tastes great with whipped cream or a scoop of ice cream.
02 - Canned peaches can substitute fresh ones.
03 - Keep oil at 350°F so the rolls fry evenly.
04 - Avoid overstuffing the wrappers to stop leaking.
