Cozy up with a steamy bowl of this rich chicken gnocchi soup, packed with juicy chicken, soft potato dumplings, and crisp veggies all swimming in a creamy, herby broth. It’ll have you pulling restaurant flavors right out of your own stovetop.

This soup always takes me back to hanging out in my Nonna’s kitchen. When those onions and herbs start cooking, my family always knows something good is coming.

Tasty Ingredients Checklist

  • Italian seasonings: High-quality dried herbs give you that pure Italian flavor
  • Fresh spinach: Baby spinach melts right in without turning tough or chewy
  • Heavy cream: Real cream makes all the difference for that gorgeous, smooth finish
  • Rotisserie chicken: Grab-and-go chicken saves time but still packs that roasted punch
  • Potato gnocchi: Fresh ones stay snuggly and cook fast, giving a way better bite
  • Aromatics: Diced onions, garlic, and celery start your flavors off right

Bring It All Together

Gnocchi Time:
Drop in the gnocchi while the broth simmers, and watch for them to float to the surface
Flavor Burst:
Mix in the chicken and spices, letting it bubble for the flavors to come together
Start Off Right:
Sauté onion, garlic, and celery with olive oil in a big pot until things smell amazing

Gnocchi has always been that food that reminds me of home. These days, this soup is my easy fix for busy nights when I want a little bit of nostalgia and a lot of flavor.

Tasty Combos

Pass out hunks of fresh bread or chewy garlic knots. You'll love dunking them in that awesome, rich broth.

Tasty Swaps

Mix it up by skipping chicken and tossing in sausage, or go totally veggie and use mushrooms plus veggie stock for the base.

Stays Fresh Every Last Bite

Pop leftovers in a sealed container and keep cold for up to three days. For reheating, a splash of cream brings the texture right back to where you want it.

Tweaking and fussing over the years taught me it’s not just what goes in—it’s how you make it with love. This is always the dish my family asks for at special get-togethers.

Ingredients

→ Proteins & Veggies

01 3 to 4 chicken breasts without bones or skin, pre-cooked and diced
02 1 stick of celery, finely chopped
03 Half a white onion, cut into small pieces
04 2 teaspoons of garlic, finely minced
05 Half a cup of grated carrot
06 A cup of spinach leaves, roughly sliced

→ Pantry & Fridge

07 1 tbsp olive oil
08 Four cups of chicken broth with reduced sodium
09 One pound of potato gnocchi
10 Two cups of half-and-half cream

→ Herbs & Spices

11 Salt and black pepper, adjust as needed
12 1 teaspoon of thyme herb

Directions

Step 01

Warm up olive oil in a big pot over medium heat. Toss in the celery, carrots, onions, and garlic. Stir and cook for 2–3 minutes till the onions are no longer opaque.

Step 02

Drop in the chicken, broth, herbs, salt, and pepper. Let it hit a rolling boil. Carefully add the gnocchi, cook for 3–4 minutes at a boil, then lower the temperature and let it gently simmer another 10 minutes.

Step 03

Mix in your half-and-half and sprinkle in the spinach. Let it cook for barely 1–2 minutes to soften the spinach. Taste-test and tweak seasoning if required, then dig in.

Notes

  1. Want a richer flavor? You can swap one of the cups of half-and-half with heavy cream for a smooth, creamy finish.
