Cranberry Feta Pinwheels (Print Version)

# Ingredients:

01 - Two large flour tortillas, either spinach or wheat flavored.
02 - Three-fourths cup of dried cranberries, sweetened.
03 - One-fourth cup finely sliced green onions.
04 - Eight ounces of cream cheese, let it soften first.
05 - Three-fourths cup of crumbled feta cheese (not the low-fat kind).

# Instructions:

01 - Toss the cranberries, cream cheese (softened), green onions, and feta into a mixing bowl. Stir them together until everything blends nicely.
02 - Divide the mix evenly between both tortillas. Make sure the filling is spread out smoothly across the surface.
03 - Roll each tortilla up snugly into a log. Cover the rolls with plastic wrap and pop them into the fridge for an hour or more.
04 - Slice each chilled roll into 12 uniform pieces. Place them on a serving tray, spiral side facing up.

01 - Prepare these up to 48 hours in advance for optimal freshness.
02 - Steer clear of reduced-fat feta; it tends to come out too dry.
