Cheesy Beef Tortellini Fusion (Print Version)

# Ingredients:

→ Pasta and Protein

01 - 1 pound of ground beef
02 - 9 ounces of cheese-filled tortellini

→ Vegetables and Aromatics

03 - 2 cloves of garlic, finely chopped
04 - 1 small onion, diced

→ Seasonings

05 - A teaspoon of paprika
06 - One tablespoon of chili powder
07 - Half a teaspoon of salt
08 - A teaspoon of ground cumin
09 - Half a teaspoon of black pepper

→ Sauce and Cheese

10 - One cup of shredded cheddar cheese
11 - A 10-ounce can of either green or red enchilada sauce
12 - One quarter cup of sour cream
13 - A cup of shredded mozzarella cheese

→ Garnish

14 - Chopped fresh cilantro

# Instructions:

01 - Boil the tortellini as per the instructions on the package. Drain it and leave it to the side.
02 - In a big skillet over medium heat, brown the beef, breaking it apart as it cooks. Drain any extra fat.
03 - Throw in the onion and garlic with the beef. Cook for 2 to 3 minutes, till the onion softens up.
04 - Mix in the chili powder, cumin, paprika, salt, and pepper. Let it cook for 1 minute to really bring out the flavor of the spices.
05 - Pour in the enchilada sauce and let it simmer for about 5 minutes to combine the flavors. Add the tortellini and mix it all up.
06 - Sprinkle the cheddar and mozzarella cheese on top. Cover it up and let it sit over low heat for 2 to 3 minutes, till the cheese melts.
07 - Take the skillet off the heat, mix in the sour cream, and top it off with cilantro. Serve it warm!
