Buffalo Chicken Grilled Cheese (Print Version)

Shredded chicken and cheese, spicy and savory, grilled with crisp bread and creamy blue cheese highlights.

# Ingredients:

01 - 1/4 cup cooked shredded chicken, warm
02 - 1 tablespoon hot sauce (such as Frank’s Red Hot)
03 - 1/2 tablespoon mayo (optional)
04 - 1 tablespoon carrot, grated
05 - 1 tablespoon celery, finely sliced
06 - 1 tablespoon green onion (or red onion), sliced or diced
07 - 1 tablespoon blue cheese, room temperature, crumbled
08 - 1 tablespoon salted butter, room temperature
09 - 2 slices bread (use gluten-free for gluten-free)
10 - 1/2 cup cheddar cheese, shredded (or 2 slices), room temperature

# Directions:

01 - Mix the shredded chicken, hot sauce, mayo, grated carrot, celery, onion, and blue cheese in a small bowl.
02 - Spread butter on the outside of each slice of bread. Sprinkle half of the cheddar cheese on the inside of one slice. Top with the buffalo chicken mixture, then the remaining cheese, and place the other slice of bread on top.
03 - Grill the sandwich in a pan preheated over medium heat until golden brown on both sides and the cheese has melted, about 2-4 minutes per side.
