Lay your pie crusts on some floured space. Use a glass or cutter to cut circles about 2-3 inches wide.

Line a sheet with parchment and place half the dough circles on it. Add chopped apple filling to each, then drizzle caramel on top.

Pop another dough circle over each filled one. Push down the edges with a fork to seal everything inside.

Brush each cookie's surface with your beaten egg. Combine cinnamon and sugar, then sprinkle it over the dough.

Set your oven to 350°F (175°C). Bake them for 15-18 minutes, or until their tops turn golden and delicious-looking.

Give your cookies a little time to cool before digging in. Warm ones are great, especially with a drizzle of extra caramel.
