Lemon Butter Baked Cod (Print Version)

Flaky and tender cod cooked in a buttery, lemony garlic sauce, finished with bright herbs. It’s a light, no-fuss seafood dish to make any night special!

# Ingredients:

01 - Four 6-ounce cod fillets

→ Butter Lemon Sauce

02 - 1/4 cup of melted unsalted butter (60g)
03 - 2 tablespoons of olive oil
04 - 3 tablespoons fresh lemon juice (from about one lemon)
05 - Three garlic cloves, minced up
06 - 1 teaspoon grated lemon peel
07 - 1/2 tsp ground paprika
08 - 1/2 teaspoon dried thyme (or double that for fresh thyme)
09 - Salt and black pepper – add enough to suit your taste

10 - 2 tablespoons chopped parsley leaves (fresh)
11 - Lemon wedges for serving

# Directions:

01 - Set your oven to 400°F (200°C) and grease a baking dish lightly with olive oil or spray.
02 - Combine the melted butter, olive oil, fresh lemon juice, minced garlic, grated lemon zest, paprika, thyme, and a sprinkle of salt and pepper in a small bowl. Whisk until smooth.
03 - Lay the cod fillets flat in the greased dish. Pour the buttery lemon mixture over the fish, ensuring it’s covered evenly.
04 - Pop the dish into the heating oven for 12 to 15 minutes, or just until the cod turns flaky and is no longer translucent. How long it needs depends on how thick your fish pieces are.
05 - Sprinkle fresh parsley over the top and serve alongside lemon wedges. Pair with a side of rice, veggies, or salad.
