In a separate bowl, mix powdered sugar with peanut butter until fully combined. Form the mixture into 24 one-inch balls. Set aside.

Remove cookies from the oven and immediately press a peanut butter ball lightly into the center of each cookie. Allow the cookies to cool for 5 minutes, then transfer to a wire rack to cool completely.

Melt semi-sweet chocolate chips in a microwavable bowl for 30 seconds. Stir and melt further in 15-second intervals until fully melted. Spoon approximately 1/2 tablespoon of melted chocolate over each cookie, covering the peanut butter ball. Allow chocolate to set before storing.
