# Ingredients:

01 - 1 egg, room temperature.
02 - 1/4 teaspoon salt.
03 - 1/2 teaspoon vanilla extract.
04 - 1 cup white sugar.
05 - 1/4 teaspoon cream of tartar.
06 - 1/4 teaspoon baking soda.
07 - 1 lime (use both the zest and juice).
08 - 1/2 cup unsalted butter, softened to room temp.
09 - 1-2 drops of green coloring gel (optional).
10 - 1 1/2 cups general-purpose flour.
11 - 1 tablespoon melted butter (for the glaze).
12 - Juice from 1 lime (for garnish).
13 - 1/4-1/3 cup powdered sugar (to make the glaze).

# Instructions:

01 - Mix the baking soda, salt, and cream of tartar together in a bowl until everything looks evenly combined.
02 - In another bowl, whip up the softened butter with the white sugar. Use a mixer for about 2-3 minutes until it turns pale and fluffy.
03 - Stir in the egg, vanilla, lime zest, and lime juice until you don't see any streaks of egg or liquid.
04 - Slowly add the dry flour mixture to the wet bowl. If you're using food coloring, toss it in now. Shape your dough into a ball and chill in the fridge for 2 hours.
05 - Preheat your oven to 375°F. Roll the cold dough into 1-tablespoon balls, and coat each piece evenly in a layer of sugar.
06 - On a parchment-covered baking tray, space the dough balls out so they have room to spread. Bake for 8-10 minutes until the edges turn just golden.
07 - In a small bowl, melt the butter and mix in lime juice and powdered sugar until the glaze looks completely smooth. Add this to cookies while warm.
08 - Let everything cool off completely before serving so the glaze sets perfectly.
