Cover the pot and turn the heat to low once it boils. Let the pasta cook for 8-10 minutes, stirring here and there, until it's tender and most of the liquid's gone.

Take the pot off the heat and stir the cheese until it's all melted and combined. If you'd like it creamier, pour in a little milk or toss in more cheese.

Add spices, pepper, and salt to your liking. Give it a quick stir to blend the flavors.

Serve while warm in individual bowls. Add fun garnishes if you'd like and dig in right away.

Warm olive oil in a big pot over medium heat. Add your veggies and stir them around for 3–4 minutes, letting them soften a bit.

Pour the vegetable broth (or water) into the pot along with the dry pasta. Bring it up to a rolling boil.
