One Pot Comfort Food (Print Version)

A cozy and creamy one-pot take on mac and cheese, loaded with colorful veggies. Easy cleanup and full flavor in every bite.

# Ingredients:

01 - 1 teaspoon garlic powder
02 - 1 tablespoon olive oil
03 - 2 cups shredded cheese (vegan or cheddar)
04 - 4 cups water or veggie broth
05 - Salt and pepper as you like
06 - Paprika or Italian seasoning (optional)
07 - 1 cup mixed vegetables (like spinach, peppers, or broccoli)
08 - 2 cups elbow macaroni or any pasta you prefer

# Directions:

01 - Cover the pot and turn the heat to low once it boils. Let the pasta cook for 8-10 minutes, stirring here and there, until it's tender and most of the liquid's gone.
02 - Take the pot off the heat and stir the cheese until it's all melted and combined. If you'd like it creamier, pour in a little milk or toss in more cheese.
03 - Add spices, pepper, and salt to your liking. Give it a quick stir to blend the flavors.
04 - Serve while warm in individual bowls. Add fun garnishes if you'd like and dig in right away.
05 - Warm olive oil in a big pot over medium heat. Add your veggies and stir them around for 3–4 minutes, letting them soften a bit.
06 - Pour the vegetable broth (or water) into the pot along with the dry pasta. Bring it up to a rolling boil.

01 - Switch up the veggies with what you've got handy or prefer.
02 - Want more protein? Mix in tofu chunks, chickpeas, or plant-based meat.
03 - Put leftovers in a container with a lid and keep them in the fridge for three days tops.
04 - Reheating is easier if you splash in some milk or water. Warm it gently and stir while heating on the stove or in the microwave.
