Black Bean & Sweet Potato Dish (Print Version)

# Ingredients:

→ Base

01 - 1 tbsp of olive oil
02 - 1 onion, diced
03 - 2 garlic cloves, finely chopped

→ Vegetables & Beans

04 - 1 can (14 oz) of black beans, rinsed and drained
05 - 1 peeled and cubed sweet potato
06 - 1 can (14 oz) of diced tomatoes
07 - 1 red bell pepper, diced

→ Liquid & Seasonings

08 - 1 teaspoon of smoked paprika
09 - 1 teaspoon of cumin powder
10 - 1 cup of vegetable broth
11 - A tablespoon of chili powder
12 - Salt and pepper, adjust as you like

→ Garnish

13 - Chopped fresh cilantro leaves

# Instructions:

01 - Warm up the olive oil in a big pot over medium heat. Add the chopped onion and garlic, and stir until they're soft, about 3-4 minutes.
02 - Mix in the sweet potato cubes and the diced red pepper. Let them cook and soften, stirring occasionally, for 5 minutes.
03 - Now toss in the beans, diced tomatoes, broth, and all the spices. Stir everything together, and let it heat until it starts boiling.
04 - Turn the heat down low and let it simmer for 20 to 25 minutes, or until the sweet potato is soft when poked with a fork.
05 - Sprinkle some fresh cilantro on top, then dish it up hot!
