Sweet Sandwich Treats (Print Version)

# Ingredients:

01 - 1 cup room-temperature unsalted butter (let it sit out for 10 minutes).
02 - 1 cup white sugar.
03 - A pinch (1/4 teaspoon) of salt.
04 - 2 eggs, large.
05 - 1 teaspoon of vanilla extract.
06 - Almond extract, 1/4 teaspoon.
07 - 3 cups plain flour for baking.
08 - 1-2 cups raspberry or strawberry preserves.
09 - 1 cup powdered sugar for sprinkling.

# Instructions:

01 - Using a stand mixer with its paddle, whip together butter, sugar, and salt until the mixture looks fluffy and pale.
02 - Blend in vanilla, almond extract, and eggs. Stop once it all looks smooth.
03 - Stir in the flour on low setting but stop as soon as it comes together. Don't overdo it!
04 - Flatten dough to about 1/8-inch thickness by rolling it between two sheets of parchment.
05 - Place the rolled-out dough into the fridge for at least 20 minutes till it firms up.
06 - Cut the dough into equal halves: one solid circles and the other with hearts in the middle.
07 - Freeze the shaped cookies for around 3-5 minutes before they hit the oven.
08 - In a preheated 350°F oven, bake them for about 8-10 minutes. They should firm up without turning brown.
09 - Sprinkle the sugar over the cutout cookies, spread preserves on the bottom pieces, and stick them together.

# Notes:

01 - Keep an eye on the edges—they should set but not brown.
02 - Coat the tops with powdered sugar before sandwiching.
03 - Switch up the jam flavors if you'd like some variety.
