Using a stand mixer with its paddle, whip together butter, sugar, and salt until the mixture looks fluffy and pale.

Blend in vanilla, almond extract, and eggs. Stop once it all looks smooth.

Stir in the flour on low setting but stop as soon as it comes together. Don't overdo it!

Flatten dough to about 1/8-inch thickness by rolling it between two sheets of parchment.

Place the rolled-out dough into the fridge for at least 20 minutes till it firms up.

Cut the dough into equal halves: one solid circles and the other with hearts in the middle.

Freeze the shaped cookies for around 3-5 minutes before they hit the oven.

In a preheated 350°F oven, bake them for about 8-10 minutes. They should firm up without turning brown.

Sprinkle the sugar over the cutout cookies, spread preserves on the bottom pieces, and stick them together.
