Cinnamon Cookie Squares (Print Version)

# Ingredients:

→ For the Cookie Bars

01 - 2 teaspoons of baking powder
02 - 2 and 2/3 cups of regular flour
03 - 1 cup of butter, softened but not melted
04 - A teaspoon of salt
05 - A tablespoon of vanilla extract
06 - 1 and 3/4 cups of white sugar
07 - Two eggs

→ For the Cinnamon Sugar Topping

08 - Two tablespoons of plain sugar
09 - 2 teaspoons of cinnamon powder

# Instructions:

01 - Set your oven to 350°F (roughly 175°C). Lightly grease a baking pan that’s about 9x13 inches.
02 - Grab a medium-sized bowl and stir the flour, baking powder, and salt until they blend nicely.
03 - In a bigger bowl, whip the softened butter with the 1 and 3/4 cups of sugar till fluffy and smooth. This should take 2-3 minutes.
04 - Add the eggs one at a time, allowing each one to mix in completely before adding the next. Then, stir in the vanilla extract.
05 - Slowly stir the dry mixture into the wet one until everything just comes together. Don’t overmix it!
06 - Pour the batter into your greased pan, making sure the surface is level by smoothing it out with a spatula.
07 - In a tiny bowl, mix the sugar and cinnamon for the topping. Scatter this mixture evenly over the batter in the pan.
08 - Pop it in the oven and bake for 25-30 minutes. You’ll know it’s done when the edges are golden, and a toothpick comes out clean or with a few crumbs.
09 - Let it cool in the pan till completely set. Then, cut the bars into squares and serve.

# Notes:

01 - Store these bars in an airtight container at room temperature, and they'll stay tasty for up to 5 days.
02 - Want to spice it up? Add 1/4 teaspoon of nutmeg to the cinnamon sugar mix.
