Smoked Sausage Potatoes (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 pound of smoky sausage, cut into thick slices about 1/4 inch
02 - 2 pounds of red potatoes, chopped into small cubes roughly 1 inch across
03 - One large onion, sliced thin for that caramelized goodness
04 - Red bell pepper, sliced into skinny strips
05 - Two garlic cloves, minced fine and fragrant

→ Seasonings & Oil

06 - 1/4 cup of avocado oil to fry everything up
07 - A teaspoon of thyme to bring out the flavors
08 - A teaspoon of earthy paprika
09 - 1 teaspoon of salt to taste
10 - 1/4 teaspoon of freshly cracked black pepper
11 - A tablespoon of rosemary (or 1 1/2 teaspoons dried), coarsely chopped
12 - Fresh parsley leaves, thrown on top at the end for color

# Instructions:

01 - Heat up half the avocado oil in your large pan until it's shimmering. Add all the sausage slices, letting them brown for 4-5 minutes until golden and crisp. Scoop them out and set aside once done.
02 - Use the rest of your oil for the potato cubes. Drop them into the pan and let them get that lovely golden edge by cooking for 5-7 minutes, giving them a stir here and there.
03 - Throw in the onion slices and bell pepper strips. Cook everything together for around 5-7 minutes, remembering to stir so nothing sticks or burns.
04 - Add the garlic, thyme, paprika, salt, and pepper to the pan. Stir it all around to coat everything nicely, then add the sausage back in to combine.
05 - Turn the heat down low and let everything simmer for another 5-7 minutes until the potatoes are crispy outside and soft inside. Sprinkle the chopped rosemary on top, give it a quick stir to release some aromatics, and garnish with fresh parsley if you'd like.

01 - This hearty one-pan meal is done in about 30 minutes, great for busy evenings!
02 - For evenly cooked potatoes, make sure each cube is about the same 1-inch size.
