Toss pork into the slow cooker, then spread garlic cloves around the meat.

In a small bowl, stir together the soy sauces, honey, sesame oil, vinegar, cornstarch, ginger, and chili flakes.

Drizzle the sauce all over the pork, making sure each surface gets some (but it doesn’t have to be swimming in sauce).

Set slow cooker to high for about 2 to 2½ hours or low for roughly 4 hours. Cook until the pork is super tender and falling apart.

Remove the garlic. Use a fork to pull the pork into shreds, then heat on high until warmed through. Pair it with noodles, rice, or pile it into tacos or sliders.
