Sheet Pan Spicy Chicken Potstickers (Print Version)

# Ingredients:

→ Chicken Potstickers

01 - 2 tablespoons vegetable oil, divided
02 - 1/2 lb ground chicken
03 - 3/4 cup shredded cabbage
04 - 1/4 cup shredded carrot (about 1 small carrot)
05 - 1 small red chile pepper or jalapeno, finely minced
06 - 1/4 cup minced green onion
07 - 2 cloves garlic, minced
08 - 1 tablespoon grated fresh ginger
09 - 1 tablespoon soy sauce
10 - 1 teaspoon kosher salt
11 - Pinch of red pepper flakes or more if you'd like it spicier
12 - 18-21 round Asian dumpling wrappers (gyoza or potsticker)

→ Ginger Sauce

13 - 1 teaspoon sesame oil
14 - 1 teaspoon grated fresh ginger
15 - 1/3 cup soy sauce
16 - 2 tablespoons sweet red chili sauce
17 - 1 tablespoon light brown sugar
18 - 2 tablespoons minced green onion

# Directions:

01 - Preheat oven to 425°F. Grease a large baking sheet with 1 tablespoon vegetable oil. Set aside.
02 - In a large bowl, combine ground chicken, shredded cabbage, shredded carrots, minced pepper, minced green onion, minced garlic, grated fresh ginger, soy sauce, kosher salt, and red pepper flakes until thoroughly mixed.
03 - Fill a small bowl with water. Place dumpling wrappers on a work surface and place about 1 tablespoon filling in the center of each wrapper. Use your fingers to rub the edges of each wrapper with water, then fold the dough over the filling to create a half-circle. Pinch edges to seal.
04 - Arrange potstickers in a single layer on the prepared baking sheet. Brush potstickers with the remaining 1 tablespoon vegetable oil.
05 - Bake potstickers at 425°F for 10 minutes, then remove from the oven and carefully flip each potsticker. Return to the oven and bake for an additional 10-12 minutes until golden and the internal temperature reaches 165°F.
06 - In a small skillet, heat sesame oil over medium heat until shimmery. Add grated ginger and sauté for 1-2 minutes until golden and fragrant. Transfer ginger to a small bowl and whisk in soy sauce, sweet red chili sauce, light brown sugar, and minced green onion until smooth.
07 - Serve potstickers warm with ginger sauce for dipping.
