Sesame Chicken Cabbage Crunch (Print Version)

Juicy sesame chicken, crisp cabbage, and fresh veggies tossed with ginger dressing for a bright, crunchy meal.

# Ingredients:

→ For the chicken

01 - Grilled Sesame Chicken

→ For the salad

02 - 4 cups shredded green cabbage
03 - 2 cups shredded red cabbage
04 - 1/2 cup diced green onion
05 - 3/4 cup freshly diced cilantro
06 - 1 cup shredded carrots
07 - 1 red bell pepper, thinly julienned
08 - 1 jalapeno, seeded and diced

→ For the dressing

09 - 1 batch Sesame Ginger Dressing

→ For serving

10 - 1/3 cup toasted sliced almonds
11 - 1/3 cup roasted cashew halves
12 - Sesame seeds
13 - Extra cilantro
14 - Extra green onion
15 - A few jalapeno slices
16 - Optional: Crispy wonton strips

# Directions:

01 - Marinate the chicken using the grilled sesame chicken recipe.
02 - Prepare the sesame ginger dressing and set aside.
03 - In a large bowl, add the green and red cabbage, green onion, cilantro, carrots, bell pepper, and jalapeno. Pour the dressing all over the salad and toss to combine and coat all the veggies. Cover and set aside while you bake or grill the chicken.
04 - Add the salad to a large platter. Garnish with toasted sliced almonds, cashews, extra cilantro, sesame seeds, jalapeno slices, and chopped green onion, if desired. Optionally, add crispy wonton strips. Serve immediately.

01 - For a vegetarian or vegan option, omit the chicken or replace it with tofu or rinsed and drained chickpeas.
