Kale and Sausage Dish (Print Version)

A cozy soup blending bold Italian sausage, fresh kale, and creamy beans. Ideal for chilly evenings!

# Ingredients:

→ Vegetables & Beans

01 - 2 cups of kale, roughly chopped
02 - One 14 oz. can of diced tomatoes
03 - One 14 oz. can of cannellini beans, rinsed and drained

→ Base

04 - 1 tablespoon of olive oil
05 - 1 pound of Italian sausage, take it out of the casing
06 - 1 medium onion, finely diced
07 - 2 garlic cloves, minced

→ Liquid & Seasonings

08 - 4 cups of chicken broth
09 - 1 teaspoon of dried thyme
10 - Season with salt and pepper

# Directions:

01 - Warm up the olive oil in a big pot over medium heat. Toss in the sausage, crumbling it as you cook, until it's browned—this should take about 5-7 minutes.
02 - Throw in the onion and garlic, letting them soften for 3-4 minutes.
03 - Pour in the chicken broth, toss in those tomatoes, kale, beans, thyme, and adjust the seasoning with salt and pepper. Give it a good mix and bring it all to a boil.
04 - Turn the heat down and let it simmer for 20-25 minutes—just enough time to get the kale tender.
05 - Dish it up while it's nice and warm.
