Sausage Rice Skillet (Print Version)

# Ingredients:

→ For the skillet

01 - 1/2 yellow bell pepper (thinly sliced)
02 - 4 cloves garlic (chopped finely)
03 - 1/2 red bell pepper (thinly sliced)
04 - 12 oz smoked sausage (cut into slices)
05 - 1/2 tsp ground black pepper
06 - 1 small white onion (sliced into quarters)
07 - 1/2 tsp kosher salt
08 - 5 tbsp tomato paste
09 - 1/8 tsp cayenne pepper
10 - 1 tsp paprika
11 - 1 1/4 cup white rice (raw)
12 - 1 1/4 cup chicken broth (low-sodium, split)
13 - 2 tsp olive oil
14 - 1 1/2 tbsp parsley (fresh, minced for topping)

# Instructions:

01 - Follow the instructions on the rice packaging to cook it up. Once you've got it ready, set it to the side and move on.
02 - Get your skillet nice and hot over medium heat. Pour in the olive oil, then add the sausage slices. Let them cook for roughly 5 minutes, flipping midway, until they're golden brown. Scoop them out and put them aside.
03 - Using the same pan with all that sausage flavor, toss in the onions and peppers. Let them soften for about 4 minutes. Add the garlic, salt, and pepper, and stir for another minute or so. Once fragrant, move the veggies to the same plate as your sausage.
04 - Lower your heat to medium. Pour 3/4 cup of the chicken broth into the skillet along with the tomato paste. Stir ‘til smooth. Let it bubble gently for a minute, then mix in the paprika and cayenne for a little spice.
05 - Now's the fun part! Add the cooked rice, browned sausage, softened veggies, and the rest of the chicken broth back into the pan. Stir it up well until all the ingredients are mixed and warmed through.
06 - Scatter the fresh parsley over the top, then serve while everything's hot and delicious. It’s best straight out of the skillet for the best flavor!

# Notes:

01 - Craving more spice? Toss in some red pepper flakes or an extra pinch of cayenne.
02 - Feel free to switch to a different sausage like chorizo, andouille, or even turkey sausage.
03 - Want cheesy vibes? Stir in shredded cheddar or Parmesan before dishing it out.
04 - Boost the veggies! Toss in things like zucchini, mushrooms, or spinach if you've got them on hand.
