Peachy French Toast Delight (Print Version)

# Ingredients:

→ For the French Toast

01 - 2 medium eggs
02 - 1 tablespoon vanilla extract
03 - 1 cup whole milk
04 - 2 tablespoons fine sugar
05 - 2 thick slices of brioche, challah, or farmhouse bread

→ For the Peaches

06 - 2 tablespoons fine sugar
07 - 1 teaspoon cinnamon powder
08 - 1 can of sliced peaches in syrup
09 - 1 tablespoon cornflour

→ For the Cobbler Topping

10 - 1 teaspoon ground cinnamon
11 - 60g butter, melted
12 - 1.5 tablespoons soft brown sugar
13 - 100g (around 6 cookies) digestive biscuits

→ For Serving

14 - Vanilla ice cream (optional)
15 - Caramel sauce from the store

# Instructions:

01 - Grab a bowl and whisk the eggs together with the milk, vanilla, and sugar. Coat both faces of the bread slices thoroughly in this mix. Using low heat, fry them until they’re a beautiful golden on each side.
02 - Warm the peach slices in their syrup on a stovetop, keeping 1/4 cup of the syrup aside. Blend the reserved syrup with the cornstarch. If needed, strain out clumps. Now add the strained mixture, cinnamon, and brown sugar to the pan with peaches. Stir softly as the syrup thickens up a bit, and then take it off the heat.
03 - Crush the biscuits into crumbs (small pieces are fine). Mix them up with the melted butter, cinnamon, and brown sugar until everything’s combined and coated evenly.
04 - On plates, arrange the French toast. Spoon some warm peaches on top, sprinkle over the crumbly cobbler mix, and add a scoop of ice cream if you’re using it. Drizzle caramel sauce to finalize.

01 - If digestives aren’t available, graham crackers work as a substitute.
