Set your oven to 350°F (175°C) and let it heat up.

Sprinkle both sides of the pork chops with salt and pepper to your taste.

Put the olive oil in a large skillet and warm it over medium-high heat. Add the pork chops and cook each side for 3-4 minutes until lightly browned. Move them to a plate when done.

Using the same skillet, toss in the sliced onions. Let them cook for about 10 minutes, stirring now and then, until they're soft and brown.

Combine the cream of mushroom soup, sour cream, garlic powder, onion powder, and thyme (if you want to include it) in a bowl. Stir it all together until smooth.

Take a baking dish and spread half the soup mix evenly on the bottom. Lay the browned pork chops on top, then cover them with the rest of the soup mix so they're fully coated.

Add the cooked onions over the chops, sprinkle on the shredded cheese, and finish by spreading the French fried onions on top.

Cover the dish with foil, place it in the hot oven, and bake for 30 minutes.

Take the foil off and bake for another 10-15 minutes until the cheese melts and the fried onions are crispy.
