Warm up some oil in a roomy pan. Fry sausages over medium heat for about 6-8 minutes until brown and fully cooked.

Take sausages out of the pan, chop them into thick pieces, then cover with foil so they stay warm.

Use the same pan to cook the chopped onions for a couple of minutes till soft and golden.

Stir curry seasoning and flour into the onions until blended well.

Pour the stock in little by little, stirring to create a smooth, thick sauce.

Add the sliced carrot and sprinkle in salt and pepper. Let it cook for around 5 minutes at a gentle simmer.

Put the sausage pieces back into the pan and toss in the peas and corn. Simmer for another 2 minutes until everything is warmed through.
