# Ingredients:

01 - 1/4 cup olive oil, extra virgin preferred.
02 - 1/2 pound mild mortadella slices.
03 - 1/2 pound smoky Italian salami, sliced.
04 - 1 cup finely chopped green olives.
05 - 2 full tablespoons of red wine vinegar.
06 - 1 cup of diced pickled veggie mix (giardiniera).
07 - 1/2 teaspoon dried leaves of oregano.
08 - 1 big loaf of round Italian bread, about 10 inches across.
09 - 2 tablespoons whole capers.
10 - 3 fresh garlic cloves, minced.
11 - 1/2 cup of roasted red bell pepper pieces.
12 - 1 finely chopped shallot.
13 - 1/2 teaspoon dried basil flakes.
14 - 1/2 pound seasoned capicola or ham slices.
15 - 1/2 pound of provolone cheese slices.

# Directions:

01 - In a bowl, stir together the green olives, diced giardiniera, roasted red pepper pieces, shallot, capers, and garlic. Add the olive oil and red wine vinegar. Toss in basil and oregano, then mix everything thoroughly until combined.
02 - Slice the loaf in half horizontally. Scoop out some of the soft inside to make room for the filling.
03 - Evenly coat both bread halves with the olive mixture.
04 - Arrange layers of capicola (or ham), mortadella, salami, and provolone cheese on the lower bread half.
05 - Bring the top half of the bread over the filling, wrap it tightly in plastic wrap, and press it under a heavy pan for an hour. Slice into 8 even wedges and share.

# Notes:

01 - Cut into 8 smaller portions or 4 large ones.
02 - A crowd pleaser for get-togethers and potlucks.
03 - Tastes even better if you let it sit for a while.
