Mini Cheesecake Bites (Print Version)

Tiny cheesecakes with a graham crust and cinnamon apples on top. Apple Pie Mini Bites are a sweet crowd-pleaser!

# Ingredients:

01 - 1 cup crushed graham crackers (used for the base).
02 - 2 tablespoons white sugar (for the crust).
03 - 4 tablespoons melted butter (for the crust base).
04 - 8 ounces softened cream cheese (used in the creamy filling).
05 - 1/4 cup white sugar (used in the filling).
06 - 1 large egg (added to the filling).
07 - 1 teaspoon vanilla (to flavor the filling).
08 - 1 cup peeled apple pieces (for the topping).
09 - 1 tablespoon sugar (for mixing with the apple topping).
10 - 1/2 teaspoon cinnamon powder (used in the topping).
11 - 1/2 teaspoon lemon juice (for the apple topping).

# Directions:

01 - Set your oven to 325°F and line a muffin tray with paper liners.
02 - Blend cracker crumbs, sugar, and melted butter in a bowl. Scoop the mixture into each paper liner, pressing firmly. Bake for 5 minutes and let it cool down a bit.
03 - Using a bowl, mix the cream cheese and sugar until you get a smooth blend. Add the egg and vanilla, stirring until everything’s smooth and mixed.
04 - Pour the creamy filling onto the baked crust in each muffin liner.
05 - Combine the chopped apples with cinnamon, sugar, and lemon juice in a small dish. Spread the apple mix evenly on top of each cheesecake liner.
06 - Pop the cheesecakes into the oven and bake them for about 20 to 22 minutes, until they set.
07 - Once baked, allow the cheesecakes to cool completely, then leave them in the fridge for at least 2 hours before eating.
08 - Carefully remove liners, plate the cheesecakes, and enjoy the little bites!
