Sweet potatoes baked with cinnamon, maple, and buttery flavors, topped with walnuts and thyme. A great pairing for gatherings or casual dinners!

# Ingredients:

01 - 3 medium sweet potatoes, scrubbed and cut into ½-inch thick slices.
02 - ⅓ cup melted unsalted butter, used to coat.
03 - 1.5 tsp ground cinnamon, adds a cozy flavor.
04 - ½ tsp salt, sprinkle as desired.
05 - ½ tsp black pepper, add for some kick.
06 - ⅓ cup maple syrup, with 2 tbsp extra for drizzle.
07 - ⅓ cup roughly chopped walnuts, adds a crunchy texture.
08 - 1 tsp thyme leaves, to give earthy notes.

# Directions:

01 - Turn your oven on to 400°F (200°C). Clean the sweet potatoes and slice into ½-inch thick pieces, peel them if you want.
02 - In a mixing bowl, combine the melted butter with cinnamon, salt, and pepper. Toss the sweet potato slices in this mix till they're nicely covered.
03 - Spread the coated sweet potato rounds on a baking tray in a single layer. Pop them in the oven and bake for 25-30 minutes, just until they're soft but keep their shape.
04 - Mix together the maple syrup, walnuts, thyme, and a little cinnamon in a bowl to create the topping.
05 - Once the sweet potatoes are done baking, take them out and gently spoon the walnut-maple mix onto each slice.
06 - Put the tray back in the oven for another 8-10 minutes until the topping turns golden and starts to caramelize.
07 - Enjoy while warm, and if you'd like, sprinkle crumbled feta on top for a tangy kick.

# Notes:

01 - Perfect as a cozy addition to holiday tables or a quick side for everyday dinners.
02 - You can get the walnut mixture ready ahead of time to make things easier.
03 - A little crumbly feta on top gives this dish a bright, tangy pop.
