Mango Spinach Blueberry Salad (Print Version)

Sweet mango, blueberries, spinach, walnuts, and feta tossed with lemon honey mustard dressing.

# Ingredients:

→ Salad dressing

01 - ¼ cup extra virgin olive oil
02 - 2 tablespoons Dijon mustard
03 - 3 tablespoons honey, divided
04 - 1 medium lemon, juice freshly squeezed or more, to taste
05 - Freshly ground black pepper, to taste

→ Salad ingredients

06 - 6 oz fresh baby spinach
07 - 1 large mango, cored, peeled, and diced
08 - 1 cup blueberries
09 - ½ cup walnuts
10 - ⅓ cup Feta cheese, crumbled

# Directions:

01 - Combine olive oil, mustard, lemon juice, and half of the honey in a mason jar. Whisk well with a fork until emulsified. Alternatively, close the jar with the lid and shake vigorously. Add more lemon juice to taste, if desired.
02 - In a small bowl, combine walnuts with the remaining half of the honey. Toss to coat well.
03 - In individual bowls, place fresh baby spinach as a base. Layer with diced mango, blueberries, honey-glazed walnuts, and crumbled Feta cheese. Drizzle with salad dressing and season with freshly ground black pepper.
04 - Combine all salad ingredients in a large serving bowl. Add the dressing and toss to combine evenly. Serve immediately.
