Puree some fresh mango until it’s completely smooth.

Mix together the sweet rice flour, sugar, and mango puree in a microwaveable bowl. Keep stirring till the mixture is smooth with no lumps.

Wrap the bowl loosely with plastic wrap, leaving a gap for air. Microwave it on high for 2 minutes.

Take the bowl out, stir the mixture well, then pop it back in the microwave for 1-2 more minutes until the dough turns sticky and clear.

Sprinkle potato starch or cornstarch on your counter. Roll out the dough, shape balls, or add more mango puree as a filling for extra taste.
