Heat your oven up to 350°F (175°C). Lay parchment paper on your baking trays.

Take a bowl and stir together the plain flour, almond flour, salt, and baking powder.

Using another bowl, whip the soft butter and powdered sugar until it feels airy (about 3 minutes).

Blend in the egg and vanilla extract until the mixture looks smooth.

Slowly fold the dry mix into the wet ingredients, stirring lightly until it's just mixed.

Flatten the dough into a disc shape, cover it in plastic wrap, and chill it in the fridge for an hour or longer.

Roll out the dough to about an eighth of an inch thick on a floured surface. Use your round cutter to make circles.

Cut small holes in the center of half the cookies to prepare space for the jam filling.

Bake the cookies on the prepped trays for 8-10 minutes. Look for lightly golden edges.

After baking, let the cookies rest on the trays for about 5 minutes before transferring them to cooling racks.

Spread a bit of jam onto the full-circle cookies, then put a cookie with a hole on top. Press them down gently to stick together.
