Linzer Sandwich Jam (Print Version)

# Ingredients:

01 - 1/2 cup powdered sugar.
02 - 1/4 tsp salt.
03 - 1/2 cup raspberry jam.
04 - 1 large egg.
05 - 1 tsp vanilla extract.
06 - 1/2 tsp baking powder.
07 - 2 cups plain flour.
08 - 1/2 cup soft butter (unsalted).
09 - 1/2 cup almond flour.

# Instructions:

01 - Heat your oven up to 350°F (175°C). Lay parchment paper on your baking trays.
02 - Take a bowl and stir together the plain flour, almond flour, salt, and baking powder.
03 - Using another bowl, whip the soft butter and powdered sugar until it feels airy (about 3 minutes).
04 - Blend in the egg and vanilla extract until the mixture looks smooth.
05 - Slowly fold the dry mix into the wet ingredients, stirring lightly until it's just mixed.
06 - Flatten the dough into a disc shape, cover it in plastic wrap, and chill it in the fridge for an hour or longer.
07 - Roll out the dough to about an eighth of an inch thick on a floured surface. Use your round cutter to make circles.
08 - Cut small holes in the center of half the cookies to prepare space for the jam filling.
09 - Bake the cookies on the prepped trays for 8-10 minutes. Look for lightly golden edges.
10 - After baking, let the cookies rest on the trays for about 5 minutes before transferring them to cooling racks.
11 - Spread a bit of jam onto the full-circle cookies, then put a cookie with a hole on top. Press them down gently to stick together.
