Chicken with Lemon and Herbs (Print Version)

# Ingredients:

→ For the Skewers

01 - 1 lb of chicken breast, no skin or bones, chopped into 1-inch chunks
02 - 2 tbsp of fresh lemon juice
03 - 1 tsp of dried oregano
04 - 2 tbsp of olive oil
05 - Salt and freshly cracked pepper to preference
06 - 1 tsp of dried thyme
07 - Fresh garlic, 2 cloves, finely chopped
08 - Lemon wedges fresh from the fruit, to serve

# Instructions:

01 - Take a bowl and combine olive oil, chopped garlic, lemon juice, thyme, oregano, salt, and pepper. Toss the chicken pieces into this mix and coat them evenly. Let it sit for 30 minutes so the flavors soak in.
02 - Heat your grill to a medium-high setting. Once it's ready, stick the marinated chicken chunks onto skewers.
03 - Set the skewers on the grates and cook them for about 8 to 10 minutes. Flip them every few minutes until they're done, with those beautiful charred grill marks showing.
04 - Place the freshly grilled skewers onto a serving plate. Add lemon wedges on the side and squeeze some juice over them for extra zest when eating.

01 - If you don’t have a grill, you can cook these on a broiler with similar results.
