Italian Pasta Salad Mozzarella (Print Version)

Tossed rotini, mozzarella, salami, tomatoes, cucumber and olives in zesty Italian dressing for a flavorful dish.

01 - 16 oz rotini pasta
02 - 1 pint cherry or grape tomatoes, sliced
03 - 1 english cucumber, chopped
04 - 1/2 red onion, thinly sliced
05 - 8 oz fresh mozzarella balls (mozzarella pearls or Bocconcini)
06 - 4 oz salami, sliced
07 - 3/4 cup kalamata olives, sliced
08 - 3/4 cup pepperoncini
09 - 1/2 cup fresh parsley and basil, chopped
10 - Italian salad dressing

# Directions:

01 - Bring a large pot of water to a boil, sprinkle in some salt, and cook the pasta according to the package directions until al dente.
02 - Mix the cooked pasta, chopped vegetables, mozzarella, salami, pepperoncini, olives, and fresh herbs in a large bowl.
03 - Drizzle the Italian dressing over the mixture and toss thoroughly. Season with additional salt and pepper, as needed.
04 - Serve immediately or cover and refrigerate for a few hours to marinate. For marinating, allow the pasta salad to sit in the fridge for a few hours or overnight. Optionally, reserve extra dressing to toss before serving, as the pasta will absorb some of the dressing over time.
