Mini Italian Sandwiches (Print Version)

Soft brioche rolls packed with Italian meats, provolone, and tangy olives. Easy, fun, and filling.

# Ingredients:

→ Brioche Rolls

01 - 2 1/4 teaspoons (7g) active dry yeast
02 - 2 large eggs at room temperature
03 - 1 1/2 teaspoons of fine salt
04 - 1/3 cup of sugar split (2 tbsp + 1 tsp)
05 - 1 tablespoon of melted butter for brushing
06 - 3 1/4 cups (390g) of plain all-purpose flour
07 - 2/3 cup (151g) milk warmed to 105°F
08 - Sesame seeds for garnish (optional)
09 - 1 egg (for egg wash)

→ Olive Topping

10 - 1 tablespoon fresh parsley, chopped small
11 - 1 teaspoon honey
12 - 3 finely chopped pepperoncinis
13 - 1 clove garlic grated down
14 - 1 sprig thyme, fresh
15 - 1/4 cup premium olive oil
16 - 1/4 teaspoon ground black pepper
17 - 1/2 cup diced green olives
18 - 1/2 cup chopped kalamata olives
19 - 2 teaspoons minced basil (fresh only)
20 - 2 tablespoons balsamic vinegar

→ Sandwich Fillings

21 - 18 thin slices of salami
22 - 6-12 slices of rich mortadella
23 - 6 halved slices of provolone cheese
24 - 6-12 slices of black forest ham
25 - 18 slices of classic pepperoni

# Directions:

01 - Mix the yeast, a teaspoon of sugar, and the warm milk together. Set aside for 5-7 minutes so bubbles appear.
02 - Blend the flour, yeast mix, eggs, salt, butter, and remaining sugar. Knead using a dough hook for 15-20 minutes to make elastic dough.
03 - Put your dough somewhere warm for about an hour until it grows twice its size.
04 - Split dough into 12 even pieces (61g each). Form balls, stretch them into logs, and place in a greased 9x13 inch pan.
05 - Wait 30-45 minutes for a second rise. Brush with egg, sprinkle sesame seeds on top, and bake at 375°F for about 16-20 minutes.
06 - Stir all the topping ingredients together. Place in the fridge for at least 20 minutes to blend flavors.
07 - Slice your rolls, layer the meats and cheese as you prefer, and spoon the olive mix over them.

# Notes:

01 - Store-bought rolls work fine!
02 - Keep sandwiches fresh in the fridge for up to 3 days.
03 - Switch out the meats and cheese to suit your taste.
