Italian Chicken Mozzarella Panini (Print Version)

Panini with juicy chicken, pesto, mozzarella, and roasted red pepper, pressed between crusty Italian bread.

# Ingredients:

01 - 4 slices Italian bread, thickly sliced
02 - 2 tablespoons pesto
03 - 1 chicken breast, cooked and sliced in half lengthwise
04 - 2 tablespoons red onion, slivered
05 - 1/4 cup roasted red peppers, thinly sliced
06 - 4 ounces low moisture, part-skim mozzarella, shredded or thinly sliced
07 - Cooking spray

# Directions:

01 - Slather two slices of Italian bread evenly with pesto.
02 - Top each slice with one half of the chicken breast, and evenly divide the slivered red onion, roasted red peppers, and shredded mozzarella. Top each with another slice of bread.
03 - Heat the panini press and coat with cooking spray.
04 - Place the sandwiches inside the press and grill for 3-4 minutes on each side. Cooking time may vary depending on the thickness of the bread and the press.
05 - When the sandwich is heated through and the cheese has melted, remove it, chop in half, and serve while hot.

# Notes:

01 - You can substitute the chicken breast with precooked chicken, chicken cutlets, homemade shredded chicken, or store-bought rotisserie chicken.
