Crank up the pizza oven to 700°F if you're using one, or set a regular oven with a stone to 550°F.

Sprinkle flour on your pizza peel and stretch the dough into a circle, about 11 to 13 inches wide.

Spread the sauce, then add mozzarella, dollops of ricotta, torn prosciutto, coppa slices, and onion.

Make sure the dough still slides around on the peel. If it sticks, add a bit more flour underneath.

Bake for 2 minutes, giving it a turn every 15 seconds or so.

Bake for about 10 minutes, making sure to rotate it about halfway through cooking.

Drizzle the hot honey across the top, sprinkle on a little finishing salt, cut into slices, and enjoy.
