Peel and slice the peaches, then set them aside.

Spread ricotta cheese onto one side of the bread slices. Top one slice with peach slices and drizzle with honey. Top the other slice with cheddar cheese.

Spread butter on the outside of each slice of bread.

Heat a skillet over medium-low heat or use a panini press. Add the assembled sandwiches and cook until the cheese has melted. If the bread is browning too quickly, reduce the heat to low.

If using optional ingredients, remove the top of the sandwich and place them on the melted cheese.

Serve the sandwiches immediately as they are best enjoyed warm.
