Take the butter and spread it all over one face of each bread slice.

Take one slice of bread, on the un-buttered side, spread the mascarpone. Layer the banana slices, scatter them evenly, then drizzle the honey over the top. Place the other slice of bread on top, buttered side facing outward.

Heat a flat, non-stick pan on a medium-high flame. Lay the sandwich in the pan and toast it for about 2–3 minutes per side until it’s golden brown and crisp.

Take the sandwich off the heat, cut it down the middle, and serve while it’s still hot.
