01 - 1 can tuna in water, drained
02 - 1/2 cup plain Greek yogurt
03 - 1 tablespoon Dijon mustard
04 - 1 tablespoon lemon juice
05 - 1/4 cup celery, finely chopped
06 - 1/4 cup red bell pepper, finely chopped
07 - 1/4 cup cucumber, diced
08 - 1/4 cup red onion, finely chopped
09 - Salt, to taste
10 - Pepper, to taste
11 - 1 tablespoon fresh parsley, chopped, for garnish
12 - Whole grain bread or lettuce leaves, as needed, for serving

# Directions:

01 - Gather all your ingredients: tuna, Greek yogurt, Dijon mustard, lemon juice, and fresh veggies.
02 - Open the can of tuna and drain the water. Place the tuna in a medium mixing bowl and break it up with a fork.
03 - Finely chop the celery, red bell pepper, cucumber, and red onion.
04 - In the bowl with the tuna, add Greek yogurt, Dijon mustard, and lemon juice. Mix until creamy and smooth.
05 - Gently fold in the chopped vegetables and season with salt and pepper to taste.
