Healthy Blueberry Baked Oatmeal (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 2 3/4 cups traditional rolled oats
02 - 1 teaspoon baking powder
03 - 1 1/2 tablespoons chia seeds (optional)
04 - 1/4 teaspoon ground nutmeg
05 - 1/4 teaspoon fine salt
06 - 1/2 teaspoon cinnamon powder

→ Wet Ingredients

07 - 1 mashed ripe banana (about 1/2 cup)
08 - 1/3 cup honey or maple syrup
09 - 2 large-sized eggs
10 - 1 1/2 cups of your preferred milk
11 - 2 teaspoons vanilla extract, pure
12 - 1/4 cup of melted coconut oil or unsalted butter

→ Mix-ins

13 - 1/4 cup of chopped or sliced almonds, with extra for sprinkling on top
14 - 1 and 1/2 cups of frozen blueberries

# Instructions:

01 - Set your oven to 375°F and grease a 9x9 or 8x8 baking dish with cooking spray.
02 - Stir all the ingredients together in a bowl until everything's mixed evenly.
03 - Pour the batter into the baking dish you prepared. Add extra blueberries or almonds on top if you like.
04 - Pop it in the oven and bake for 30-35 minutes. The center should be firm when done. Cool for 10 minutes before eating.

# Notes:

01 - If you want it egg-free, replace eggs with 2 tablespoons of ground flax and mix it with 5 tablespoons water.
02 - You can store this in the fridge for up to 7 days or freeze it up to 3 months.
03 - Both fresh or frozen blueberries work.
