Wash rice until water is clear. Cook with the salt and water, then cover and let it sit for 10 mins.

Combine sugar and vinegar, then mix it into the warm rice.

Line an 8x8 pan, press rice mix firmly inside, and chill for about an hour.

Divide into small squares. Coat them in sesame seeds if you like.

In hot oil, fry both sides for roughly 3–4 mins until golden and crunchy.
