Goat Cheese Mushroom Bites (Print Version)

# Ingredients:

01 - 10 squares of puff pastry (each 4 inches).
02 - 8 oz of sliced mushrooms.
03 - 1 finely diced shallot.
04 - 3 cloves of garlic, chopped up small.
05 - 1/3 cup of chopped parsley.
06 - 2 tbsp of olive oil.
07 - 1/4 cup of grated parmesan.
08 - 4 oz of goat cheese.
09 - 1/4 tsp each of rosemary, thyme, and sage.
10 - 1 egg for brushing.
11 - 1/4 cup of white wine.

# Instructions:

01 - Set oven to 400°F. Lay pastry squares on baking trays. Use a fork to poke holes all over each piece.
02 - Warm oil in a skillet, toss in minced garlic and diced shallot. Stir in mushrooms and herbs; cook 2 minutes. Pour in wine and cook 4-5 minutes longer.
03 - Stir the cheeses in with parsley. Mix everything until the cheeses melt and blend together.
04 - Spoon a bit of filling on each pastry. Pinch or roll the edges however you like, then brush them with the egg wash.
05 - Bake for 25-30 minutes, or until they turn crisp and golden.

# Notes:

01 - Store-bought puff pastry saves time.
02 - Let the pastry thaw in the fridge overnight.
