Garlic Steak Potatoes (Print Version)

# Ingredients:

→ Baked Potatoes

01 - 4 tablespoons olive oil
02 - 4 large russet potatoes, washed and dried well
03 - 1.5 tablespoons coarse sea salt for skins

→ Steak

04 - 4 tablespoons avocado oil, split into two portions
05 - 2 teaspoons coarse kosher salt
06 - 2 pounds of beef (choose from ribeye, NY strip, tenderloin, or sirloin)
07 - 2 tablespoons low-sodium Cajun spice mix

→ Garlic Butter & Sauce

08 - 2 tablespoons finely chopped garlic (about 8-10 cloves)
09 - ⅔ cup shredded parmesan cheese
10 - 6 tablespoons softened butter
11 - ½-1 teaspoon crushed red pepper flakes
12 - 1 teaspoon coarse ground black pepper
13 - 1½ cups rich heavy cream
14 - 2 tablespoons fresh parsley, chopped
15 - Juice from 2 lemon wedges

# Instructions:

01 - Heat your oven to 425°F. Place parchment on a baking sheet. Coat the potatoes in olive oil, sprinkle on salt, and set them on the prepared pan. Bake them for 50-60 minutes till a fork slips in without resistance.
02 - Remove extra fat from the steak and cut into chunks about 2 inches big. Pour 2 tablespoons of avocado oil over the steak and generously sprinkle Cajun seasoning to coat.
03 - In a hot cast iron pan with 2 tablespoons of avocado oil, sear the steak for 2 minutes untouched till browned, flip to the other side, cook 1 more minute. Lower heat and cook another minute before removing.
04 - Slide steak to one side of your skillet. Melt 2 tablespoons of butter, toss in 1 tablespoon minced garlic, and stir for a few seconds until the smell hits you. Toss the cooked steak in the buttery garlic mix for a minute. Transfer the steak to a bowl and keep warm with foil.
05 - To the same pan, throw in 2 tablespoons butter and your leftover garlic. Cook until it smells great, then carefully whisk in heavy cream a bit at a time. Let it simmer for 3-5 minutes, sprinkle in red pepper flakes and parmesan, and stir till it thickens up. Turn off the heat, then toss in parsley and lemon juice.
06 - Drop each baked potato from a foot above your counter (this helps fluff the inside). Make a slit at the top and fluff the inside with a fork. Spread some leftover butter inside.
07 - Top each potato with equal portions of steak. Pour the creamy parmesan sauce over everything, and it's time to serve.
